I adapted this recipe from #1 New York Times Best Seller Rip Esselstyn’s Plant Strong book. If you do not know Rip Esselstyn aside from being an author and plant-strong advocate he is also a firefighter and former pro triathlete.

I love everything about this book it is very informative and it comes with 150 great selections of recipes from breakfast to dinner as well as desserts and even burgers. It is a really good investment for a book whether you are curious about plant-based cooking or ready to shift to a healthier lifestyle. I definitely recommend his book it has Two parts First part has 35 informative chapters while part Two is all about recipes.

I got a copy of his book in Powell’s City of Books in Portland, Oregon during my recent trip. I would say this is one of the biggest and best bookstore I have been to and a day is literally not enough to explore. If you would like to have a copy of his book you can also order here.

Now back to this Banana Oatmeal Peanut Butter Cookies it is my go-to snack before heading out for a run. I also like having it in the office as my snack. I like how this is so easy to do and it doesn’t require any dairy products at all. I like how I can make it in batches store it in a container and it’s perfect for sharing as well. Now here are the ingredients for this easy recipe.

Banana OatMeal Peanut Butter Cookies

INGREDIENTS:

  • 3 ripe Bananas
  • 2 cups rolled oats
  • 1/2 cup whole wheat flour
  • 3/4 cup natural chunky peanut butter
  • 1 tsp baking powder
  • 1 tbsp vanilla extract
  • 3 tbsp maple syrup
  • 1/2 cup non dairy chocolate chips (optional: raisins)

INSTRUCTIONS:

  • Preheat oven to 180°C. Prepare baking pan with parchment paper.
  • In a large bowl mash Bananas and add peanut butter, vanilla extract and maple syrup. Mix together.
  • In another bowl mix rolled oats, whole wheat flour and baking powder.
  • Now add the dry mixture with the wet mixture. Mix again until everything is combined. Your batter should be slightly sticky.
  • Pour in the chocolate chips or raisins.
  • Now scoop a tablespoon size balls from the batter and line it in the baking pan.
  • Bake for about 15-18 minutes.
  • Let it cool down for a bit and its ready to eat.

Isn’t it so easy to prepare and within an hour you can make batches of this Banana Oatmeal Peanut Butter Cookies. I like that you don’t need to add sugar anymore in the ingredients and yet it still come out to be sweet, good and tasty. So you don’t really have to buy snacks if you can actually make your own.
