Either pair this recipe with some fried tofu, tempeh or enjoy it alone, you can never go wrong making this stir fry bok choy and there’s no need to do a take-out.
For the recipe, I use mature bok choy available in the market. I use two bunches of it and cut the end part.
You can also use baby bok choy and cutting the bottom is optional. Although I usually still cut them just to clean all the stems prior to cooking, removing the little dirt and soil from the leaves to the stem.

TYPES OF BOK CHOY
There are green and white-stem bok choy and in Asia green stem bok choy is widely available.
BOK CHOY WITH MUSHROOM OYSTER SAUCE

INGREDIENTS
- 250g Bok choy or 2 bunches of Bok choy
- 1 tablespoon cooking oil
- 3 cloves garlic
- 1 small onion
- 2 tablespoon mushroom oyster sauce
- 1/2 cup water
- Pinch of black pepper and chili flakes
INSTRUCTIONS
Peel and chop onion and garlic then set aside.
Wash Bok choy, cut the end part, and clean each leaf up to the stem.
Heat your pan with olive oil, saute onion, and garlic until a little brown.
Add the water and mushroom oyster sauce. Mix well.
Add bok choy and let it simmer for 2-3 minutes.
Add ground black pepper and chili flakes.
Serve and enjoy.

- You can add mushrooms too in this recipe just make sure to saute them first as bok choy is easy to cook.
- Skip the salt as the mushroom oyster sauce, black pepper and chili flakes can give this bok choy flavor.
