This buffalo cauliflower recipe is a perfect appetizer, side dish, or snack any time of the day, oops I actually paired it with rice and it’s also good. These easy baked buffalo cauliflower bites are a perfect treat for everyone especially if you are transitioning to a plant-based diet or vegan lifestyle.

Turning plant-based is always a fun learning experience every time I’m in the kitchen discovering new spices and trying recipes.
This recipe is very doable and most I have in my pantry I just needed to buy the main ingredient which is cauliflower and the hot sauce that I use. I have Tabasco sauce but decided to use mainly Frank’s hot sauce as it is I guess the not-so-secret recipe to achieve this easy baked buffalo cauliflower bites. Let’s go straight with the recipe and later I will give some information about cauliflower.
Easy Baked Buffalo Cauliflower Bites
Ingredients
- 1 head cauliflower (medium size)
- 1 cup all-purpose flour (125g) (you can also use gluten-free flour)
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/8 tsp ground black pepper
- 1 tsp salt
- 1 cup dairy-free milk of your choice ( I use soy milk) (240ml)
- * For the sauce
- 5-8 tbsp hot sauce (Frank’s hot sauce)
- 2-4 tbsp vegan butter

Instructions
- Preheat oven to 450℉ or 232℃
- Create batter in one bowl. Mix all-purpose flour, black pepper, garlic, onion, salt, and milk.
- Wash and cut the cauliflower florets almost the same size as the chicken wings and dry.
- Dip each floret in the batter until it’s fully covered.
- Prepare your baking tray. You can put a parchment paper.
- Place the florets in the tray giving enough space from one another. Also, ensure to remove excess batter from the florets.
- Bake for about 20 minutes ( do flipping in between )
- While baking the cauliflower prepare the sauce and butter in a pan. Boil for a few minutes until butter is melted.
- Once your baked cauliflower is ready remove from the oven. Brush florets with the sauce.
- Bake again for another 20-25 minutes until it’s a little brown or reaches your desired texture. (you can flip again in between)
- It is now ready to serve.

Notes
- After dipping florets in batter, you can also roll them in bread crumbs for a crispier result although I have not tried this out yet. I will do next time and update this recipe.
- If you deep the florets with the sauce it will soften baking them longer will help to make it crispier check if the stem or florets are already golden brown.
- Mine has a little crisp and it’s still ok and yummy.
- Feel free to use other spices of your choice.
