
This easy dairy-free Blueberry cake is a crowd-pleaser it’s not too sweet and perfect with any hot drinks.
A few days ago I saw a recipe for Blueberry donuts and it looks so good. But since I do not have a baking tray for donuts yet I decided to do Blueberry cake. I have modified some of the ingredients according to what I have so after my work I went straight to the kitchen and prepared the ingredients.

D you ever feel like even if work is exhausting you still manage to find time to do something that you really like doing? As for me, it’s either I will go for a run or bake something. This easy dairy-free Blueberry cake is perfect since I just recently bought Blueberries.
Easy Dairy-free Blueberry Cake
Ingredients: (Baking Conversion Chart)
- 2 cups flour
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1 cup sugar
- 1/2 tsp Cinnamon
- 3 tbsp olive oil
- 1 cup unsweetened oatmilk
- 1 tsp vanilla
- 1 cup Bluberries
- For the Glaze: 1/2cup confectionary sugar + 1 tbsp oatmilk

I use olive oil instead of vegan butter and make sure to pre-heat your oven to 180C.
Mix olive oil, oat milk, sugar, baking soda, vanilla, baking powder and cinnamon until they are all combined.
Add flour and mix again making sure you don’t overmix
Put Blueberries in the mixture and pour in your baking pan.
Bake for about 30 mins or until a toothpick is inserted in the center and it comes out clean. For the glaze put it on once the cake is cool.

Your Blueberry cake can be served as a dessert, snack or partnered with your favorite cup of coffee for a good breakfast and since I’ve already tasted mine I have more energy for my run.

This looks so good! I am going to make but sub the oatmilk for almond milk. Think that will work?
hello Sara I havent tried using almond milk for this specific recipe but i have other recipes where I sub the milk and comes out good ๐ I usually use unsweetened almond, oatmilk and soy milk in baking. I think it should be fine, I use almond milk in my other recipes ๐

This recipe looks amazingly tasty! It looks like a large blueberry muffin, and I am so excited to try it. I think this could be really delicious, too, with some sort of a brown sugar crumb on top like they do at Starbucks on their muffins! I always appreciate a good dairy-free dessert as well, so thank you for sharing this recipe!

I like that you added cinnamon, somehow it seems like it’s never used with berries! Blueberries add such nice color and moistness with cakes and quick breads!

Hi Tricia it will work with GF flour ratio is same to regular flour ๐ I have checked it although I havenโt try using it. Will update recipe once I tried. thank you
