I like writing down and listing the topics I should make articles. Recently I started transferring it on google sheets for easier access anywhere I am.

It is therefore definitely true that owning a blog is not just some sort of a hobby. Aside from it is your passion to write and share or answer readers questions it is definitely a business that needs time allocation and focus.

Although there are days when you feel you’re overloaded with ideas and information so what I do is I stop, I go outside and run. I also bake and write down recipe to save for my next post.

Seriously though I just want to share this easy dairy free chocolate cake recipe for my birthday. Yes! It’s indeed my birthday and I wanna let you know this awesome recipe which is so easy and absolutely delicious. This recipe is inspired from Alison of Loving it Vegan I made replacements from her version base on what I have in the kitchen.

To be honest I’ve been looking around for a moist and easy chocolate cake recipe with easy to find ingredients.

I want to make a cake that doesn’t compromise the taste and quality and if its dairy-free it makes me really really happy. Running on the side and when I get home learning baking and blogging one step at time.

This super moist and easy dairy free chocolate cake recipe is not complicated all the ingredients are available. I was able to make a Two layers of chocolate cake with this recipe. Another best thing about this cake is I can also make my own frosting. Now isn’t that a perfect birthday cake to enjoy.

Easy Dairy Free Chocolate Cake Recipe

Ingredients:

  • 2 cups All Purpose Flour
  • 3/4 cups Unsweetened Cocoa Powder
  • 2 cups granulated white sugar
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup buttermilk (1 cup oatmilk + 1 tbsp lemon juice)
  • 1/2 cup canola oil
  • 2 tbsp flax egg ( mix 2 tbsp of flax seed with 6 tbsp water)
  • 2 tsp vanilla extract
  • 1 cup hot coffee

I love how this cake can have lemon and coffee at the same time. There is so much twist about it and it tastes really good. You really have to try it to know what I’m talking about.

If you are skeptical about putting hot coffee you can just substitute it with hot water instead. Although I haven’t tried it yet I will let you know once I make a version of that.

The purpose of hot water or hot coffee in this easy dairy free chocolate recipe is it makes the cocoa powder stand out bringing out the flavor making your cake really moist.

For the dairy free milk I both tried Oatmilk and Soy milk. What I notice is in making buttermilk Soymilk reacts faster with lemon compared to Oatmilk. But both are good to use.

Instructions:

  1. Pre heat the oven into 180°C (385°F). Prepare the baking pan you can put a parchment paper or spray with a non-stick oil and set aside.
  2. Mix dry ingredients: all purpose flour, cocoa powder, sugar, baking powder, baking soda and salt.
  3. Prepare buttermilk (mixture of 1 cup oatmilk and 1 tbsp lemon juice). Add in the mixture.
  4. Pour in canola oil, vanilla extract and flax egg in the mixture and mix into a thick batter.
  5. Now pour in the hot coffee, your batter will be thin and easy to mix.
  6. Pour now the half part into the baking pan. If you have two baking pans you can divide the batter equally.
  7. Bake for about 30 minutes or until a toothpick is inserted and comes out clean.
  8. Let the cake cool first before transferring in a wire cooling rack and to complete the process for frosting.

The batter for this recipe can actually make 2-3 layers depending on how you divide it. I only have one cake pan so I divided mine into two.

Frosting Recipe:

  • 1 & 1/4 cup vegan butter
  • 3 & 1/2 cup powdered sugar
  • 3/4 cup cocoa powder
  • 2-4 tbsp non dairy milk
  • 1 tsp vanilla

Now just mix all of the above ingredients with your mixer. I use my whisker in doing the frosting. You can buy a vegan butter or make your own vegan butter. Once your frosting is ready just spread it all over the cake.

I made two layers and spread the frosting in between of the cake before covering the outside. You can add toppings as well according to what you like maybe chocolate strips or some fruits.

Now there you have it super moist and easy dairy free chocolate cake recipe to enjoy. This cake can last for a few days if stored in the fridge. I also tried storing it in the freezer which gave a very fine and nice look on the outside but the inside is still soft, moist and so delicious.

Ingredients
  

Chocolate Cake batter

  • 2 cups all purpose flour
  • 3/4 cups cocoa powder (unsweetened)
  • 2 cups white sugar (I use granulated)
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup dairyfree buttermilk -curdle (1 cup oatmilk + 1tbsp lemon juice)
  • 1/2 cup canola oil
  • 2 tbsp flax egg (mix 2tbsp flax seed + 6 tbsp water)
  • 2 tsp vanilla extract
  • 1 cup hot coffee ( 1 cup hot water will do)

Dairy-free Frosting

  • 1 1/4 cup Vegan butter
  • 3 1/2 cup powdered sugar
  • 3/4 cup cocoa powder
  • 2-4 tbsp dairy-free milk (I use 3)
  • 1 tsp vanilla extract

Instructions

  1. So true about the 20 80 rule! I must say my face did twist up a bit when I read hot coffee lol. I am not a coffee drinker so I would probably substitute with the hot water.
