WHAT IS A GALETTE
A french term for flat cake is usually made in free form and does not need a pie dish. The fillings are made of fruits which can vary from apples, berries, peaches, or any fruit you may want to try. The edges are folded on top of the fruits which gives its rustic look.
WHICH APPLE TO USE
Good thing this recipe is versatile which means you can use a variety of apples, from gala, braeburn, granny smith, and Fuji. I decided to use fuji apples because just like gala they are sweet and crispy although fuji is juicier.

WHY YOU NEED TO TRY THIS
This recipe is vegan and super easy to prepare and perfect for the Fall season. Enjoy it with a hot coffee or tea or top with a vanilla ice cream to enjoy. The rustic look is so appealing and not intimidating at all.
Once you learn how to make your own crust you can turn it into making pies or other galette recipes.
INGREDIENTS AND SUBSTITUTIONS
Flour – this recipe uses unbleached all-purpose flour. You can substitute a flour of your choice that is proven to work with cookies.
Brown Sugar – this recipe uses natural granulated brown sugar and white sugar will also work
Vegan Butter – no need to melt the butter when adding in the dough, just remove it from the fridge, rest for a few minutes and test with your finger if it’s soft enough to create a dimple.
Dairy-free Milk – I use unsweetened oat milk, but you can use any unsweetened nondairy milk or water for this recipe.
Fuji Apples – you can also use gala or granny smith apples. I use just about 2 pieces of it.
Cinnamon – not all Cinnamon are created equal be sure to use ceylon cinnamon as it is the sweet version of cinnamon and in powder form.
Nutmeg – it is optional, you can also use allspice or pumpkin spice in your galette recipe.
This easy vegan apple galette will satisfy your afternoon snack cravings. You can add a vegan vanilla ice cream too and you can even enjoy it as a breakfast.
The recipe is very straightforward and just needs a few kneading to incorporate all the ingredients in the dough. While for the fillings just thinly slice the apples about or about 0.2 to 0.3 cm add the spices. You may peel the skin or include it according to your preference.

EASY VEGAN APPLE GALETTE RECIPE
INGREDIENTS
For the Crust
- 1 ¼ cup or 157g unbleached all purpose flour (+ 3 tablespoon extra but you may not need all)
- ¼ teaspoon salt
- ½ cup vegan butter
- 3 tablespoon unsweetened oat milk (must be cold)
- 1 tablespoon brown sugar
Filling
- 2 Fuji Apples
- 3 tablespoon maple syrup
- 1 teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 tablespoon brown sugar to garnish before baking (optional)
INSTRUCTIONS
- In a medium size bowl, sift flour and add salt, sugar and butter.
- Add milk one tablespoon at a time, mix and knead using a wooden spatula or your hands.
- If it’s too wet add more flour one tablespoon at a time and knead a few times until a dough is formed.
- Wrap using a cling wrap and let it chill for 30 minutes to an hour.
- Preheat the oven to 375F or 190C.
- While waiting for the dough and oven to be ready, prepare the fillings.
- Wash, dry and cut the apples and remove seeds. Peeling skin is optional.
- Using the same bowl add the apples, maple syrup, cinnamon,and nutmeg and mix well.
- Once the oven is preheated on a clean surface or mat, sprinkle some flour and place the dough.
- Flatten with your palm and using a rolling pin spread the dough forming a big circle, it doesn’t have to be perfect. Thickness is about 0.2cm
- Add more flour if needed if it gets sticky.
- Once you form the crust transfer into your baking tray, be sure to put parchment paper first.
- Assemble the apples in the middle not too close to the edges as we need to fold it before baking.
- Sprinkle additional cinnamon on top and sugar as well as on the edges of the crust.
- Bake for about 50-60 minutes.
- 10 minutes before the oven goes off you can brush the edges with oat milk or maple syrup (optional)
- Remove from the oven and let it cool before serving.

- Depending on your oven you can bake for about 40-60 minutes.
- It is important to use cold milk and to chill the dough so it won’t get soggy and will not fall apart before and after baking.
