I remember the first time I was transitioning to a plant-based lifestyle, I would drink green juice every day with just a combination of celery and cucumber and yes no added sugar at all. Just pure nutrients, vitamins, minerals and fiber.

There are many types and variations of smoothies and just because you make a smoothie from fruits and vegetables doesn’t mean that it is healthy.

A VEGAN DRINK TO ENJOY

This smoothie is naturally vegan just by using water as a base liquid or you can also use coconut water or dairy-free milk which I have tried too such as almond and oat milk.

I like to share uncomplicated and straightforward recipes with a handful of ingredients.

VARIATIONS

Simply add a protein powder to make this a protein smoothie.

Add maple syrup if you like sweet green smoothies.

Add vegetables like Kale or Celery.

PREPARE IN ADVANCE

The best way to enjoy the benefits of a smoothie is to prepare and drink them right away. But if you have limited time you can chop the apple and cucumber, keep in a ziplock or container and freeze them.

Blend when you are ready to drink. The good thing about it is you won’t need ice since it is already cold.

You can also make this smoothie in one batch but it is better to consume up to 3 days.

Be sure to keep it in a clean glass container or a mason jar and place it in the fridge.

INGREDIENTS

Green apple – works as a prebiotic that helps for the growth of healthy bacteria in your gut, thanks to its compound known as pectin. It is also a good source of Vitamin C, A, Calcium and Iron.

Cucumber – has high water content which is good for hydration. Eating the skin is good as it contains 193 mg of potassium and 17 mg of magnesium which can help prevent high blood pressure. It is also good in our skin and known to aid in diabetes.

Ginger – helps in regulating blood sugar, has anti-inflammatory properties and eases osteoarthritis.

INSTRUCTIONS

Wash the fruits and chop, peel the skin of ginger, add them all together in the blender and pulse. Add water and pulse again until everything is blended. Add some ice. Serve and enjoy.
