Yes to the kitchen, a week ago my friend shared a photo of her baked sweet quick bread that got my attention it definitely looks yummy and I got curious with the name. It’s nice when you and your friends despite the distance are able to keep in touch and share baking recipes and you tell them I wanna make a dairy-free version of this.

What is a sweet quick bread anyways? Quick bread is made with a leavening agent such as baking powder or baking soda that permits immediate baking of the dough or batter mixture. Quick bread also has a lot of different types it varies from Banana bread, muffins, beer bread, and many others.

Since I’m planning to make something to give to my housemates who are front-liners I decided to do one for them. Now let’s head to the recipe.

Sweet Quick Bread

INGREDIENTS:

  • 2 1/4 cups All Purpose Flour
  • 1 tbsp Baking powder
  • 2 tbsp Flaxseed Egg
  • 1/4 tsp Salt
  • 1 1/2 cup Sugar
  • 1 1/2 cup dairy-free milk ( I use unsweetened almond milk)
  • 1/2 tbsp Vanilla
  • 4 tbsp Canola oil (recommended is 6 by I just put 4)
  • Cinnamon (optional)
  • Dark Chocolate chips (lots of it and make sure its vegan)

INSTRUCTIONS:

  • Preheat the oven to 180Β°C or 350Β°F. Prepare the baking pan you can put parchment paper or spray with oil and set aside
  • Mix all dry ingredients
  • Mix all wet ingredients (including sugar) just so they will easily dissolve in the mixture.
  • Pour the wet mixture into the dry and with your spatula ensure that they are perfectly combined.
  • You can now add your chocolate chips and cinnamon with just a few stirs.
  • Pour the batter into your baking pan and bake for about 40-45 minutes or until a toothpick is inserted and comes out clean.
