It may not be summer yet but this easy no bake mango tart will surely delight your day. It’s vegan and dairy-free. Another good way to enjoy a guilt-free dessert.

Are you team green mangoes or team yellow mangoes, well they are both so good and have different flavors.
Green mangoes go well as an appetizer or side dish check out my easy eggplant salad where I added green mangoes in the recipe.
While ripe or yellow mangoes go well with desserts just like this easy no bake mango tart. But did you know what they have in common, they both go well with a cup of rice, and yes I am not joking. If you haven’t tried it yet please do and let me know your take on it.
I remember growing up when my mom will slice the mangoes and everyone wants either of the two sides and not the seed part with less filling. But I like the seed part too where I can really squeeze and eat whatever mangoes it still has.
This mango tart recipe is very doable with just a few ingredients, all you have to do is to look for dairy-free or vegan biscuits of your choice and ripe mangoes. If you can’t find fresh mangoes you can opt for canned mangoes.
While for the biscuits it may be a tricky part, I like reading labels when it comes to buying biscuits just to make sure the ingredients are safe. Tesco has some good options and also biscoff is delicious. You can choose any biscuits of your choice in this no bake mango tart recipe.
I also added a pinch of ginger for that extra spice or you can also use ginger biscuits for the base of the tart. This is optional if you like your tart sweeter you can add sugar.
For the biscuits, you can use your blender, food processor or immersion blender just make sure to break the biscuits so that they will be easier to pulse and blend.
The biscuits need to have a fine texture so that when you make the base it is flat and easy to incorporate with the butter. Same with the mangoes extract it first making a puree as you also want it to be really fine

Easy No Bake Mango Tart
Ingredients
- 200g vegan biscuits
- 1 cup vegan butter (melted)
- 2 ripe big mangoes
- 2-3 tbsp cornstarch
- 2 tbsp dairy-free milk
- 1 tbsp fresh lemon juice
- 1 tsp vanilla
- Pinch of ginger powder (optional)
Instructions
For the crust
- Break biscuits into halves and use a countertop blender, food processor, or even an immersion blender pulse and blend until the biscuits becomes very fine and set aside.
- Using a stove under low heat melt butter without burning. Turn off the pan once butter is melted and add the biscuits. Mix together.
- Transfer crust mixture into your baking or pie dish. Make sure to evenly distribute and flatten the surface using a spatula or your fingers.
- Put in the freezer for about 30 minutes.
Mango Filling
- Slice 2 sides of the mangoes leaving the middle part(seed). Scoop the soft part of the mangoes and place it into your blender or food processor to puree.
- In a small bowl create a mixture of cornflour and milk.
- Using the same pan where butter is melted, under low heat add mango puree, cornflour mixture, lemon juice, maple syrup, vanilla, and ginger powder. Continuously mix until everything is combined and done for about 8 minutes.
- Let it cool for a while.
Mango Tart
- Remove the baking dish from the freezer.
- Transfer mango filling in the baking dish evenly.
- Chill for about 2 hours before serving.
- Serve and enjoy.
Notes
- Adding ginger powder is optional.
- I use unsweetened almond milk, you can use any milk of your choice and let me know how is it.
- If your mangoes are lacking extra sweetness you may add 1-2 tbsp of sugar.
- For the puree 2 big mangoes can yield up to 400ml.
