This easy vegan strawberry sweet quick bread is inspired by my dairy-free strawberry sweet quick bread. The difference is instead of using vegan food coloring I decided to use real strawberries.

After getting some strawberries, I use them right away to make this vegan strawberry sweet quick bread. But you know it isn’t successful so I have to make several trials before coming out with this one.
While they all have this perfect smell while baking in the oven, the others came out to be dense.

I used natural brown cane sugar and didn’t use flax egg again just so that it would not affect the color of my sweet quick bread. But flax egg is also good it does not only acts as a binder it also has benefits.
While this recipe uses canola oil, you can also opt for unsweetened applesauce or vegan butter. Adding chocolate chips is optional and you can just focus on adding more strawberries in this recipe.
This strawberry sweet quick bread does not need any frosting or glaze but if you would like to add the glaze on top it adds extra sweetness and compliments the bread.
I like a sweet quick bread recipe because just like its name, it’s pretty quick to make and enjoy. It’s perfect with your cup of tea or coffee and adding real fruits is another way to enjoy vegan bread. Enjoying every bite after my morning run or yoga.
For the strawberries, you can either chop them or use your equipment like an immersion blender or food processor. I tried both versions: puree and chop strawberries.
You can set aside some strawberries to add to your glaze which is optional, now that’s a lot of strawberries.
In making this recipe be sure not to overmix the batter to avoid the bread being dense which happened to me before and so I have to try and try again. Just ensure there are no lumps of flour visible in the mixture.

Vegan Strawberry Sweet Quick Bread
Ingredients
- 2 cups all-purpose flour (unbleached)
- 1 cup strawberries (chopped)
- 1 tsp baking powder
- ¼ tsp salt
- 3/4 cup brown sugar
- 1 cup soy milk (unsweetened)
- 1 tbsp vanilla
- 4 tbsp canola oil ( sub vegan butter, applesauce)
- Pinch of cinnamon (optional)
Optional Glaze
- 2 cups powdered sugar (sifted)
- 1/2 tsp vanilla
- 1-2 tbsp dairy-free milk
Instructions
- Preheat the oven to 180°C or 350°F
- Prepare the baking pan you can put a parchment paper or spray with nonstick oil and set it aside.
- Mix all dry ingredients.
- Mix all wet ingredients (including sugar).
- Pour the wet mixture into the dry mixture slowly and with your spatula or whisk ensure that they are perfectly combined.
- Add in chopped strawberries and fold well. Do not over mix.
- Transfer batter to the baking pan.
- Bake for about 55 -60 minutes or until a toothpick is inserted and comes out clean.
- Remove from the oven after baking and let it cool.
- Prepare the glaze. Sift powdered sugar, add vanilla and milk in a bowl.
- Pour only once the strawberry sweet quick bread is cool enough.
- Serve and enjoy.
- Transfer leftovers and put them in an airtight container. Place in the fridge to last fo up to 5 days.
Notes
- You can use any dairy-free milk of your choice. I have tried almond and soy milk both unsweetened.
- If you can’t find fresh strawberries, opt for frozen strawberries.
- I haven’t tried gluten-free flour, but you can try using a gluten-free flour that worked for you to use in this recipe.
- For nutrition, the glaze is not included in the calorie count.
