While it may be difficult for you to find Saba which is another type of banana that is popular in Asia, you can also opt for plantains to make this bananacue recipe.
Typically, bananacue is in skewers or bamboo sticks because it is sold on the streets and eaten right away. It gives ease to easily enjoy this snack even though it is still hot. But if you plan on making them at home skip the skewers and enjoy them on a small plate and fork.
These bananacues are sold along the sideways of the streets in the Philippines and are perfect to enjoy while they are still hot and they taste good and can be filling too.

WHAT IS SABA BANANA
This type of banana, also known as cardaba banana is common in the Philippines, Indonesia, Singapore, and Malaysia, you can also have the tree grown within your backyard and therefore have an all-year-round supply.
Aside from bananacue, saba banana can be made into other sweet treats that can be bought outside or made at home.
Here’s an image of our harvested Saba banana which was planted by my father.

ORIGIN OF RECIPE
While bananacue is mainly from the Philippines there are also similar recipes from other Asian countries like Indonesia and Malaysia.
WHAT YOU NEED
SUBSTITUTION FOR SABA BANANA
If you are having a hard time finding saba you can also use plantains to enjoy this recipe. Since plantains actually require cooking and also it is your best option.
One of the major differences between saba and plantains is that saba can still be eaten raw once they turn yellow and become mature while plantains need to be cooked before eating.
SWEET SNACK BANANACUE RECIPE

INGREDIENTS
Saba / Plantains – your main ingredient for this recipe and it’s rich in vitamins and minerals. Make sure to use bananas that are not too ripe or they may be mushy when you cook.
Natural Brown Sugar – this will be used to coat the saba and when caramelized it adds texture to your bananacue and it’s what makes it extra sweet. You can also use muscovado sugar to replace brown sugar.
Cooking Oil – for frying the bananacue
Cinnamon – (optional) if you want to add spice and flavor
INSTRUCTIONS
This bananacue recipe is very straightforward and can be done in less than 10 minutes. All you need is to heat your wok and make sure it’s hot enough then add oil.
Add brown sugar and let it caramelize with continuous stirring, do not leave unattended to avoid burning it and to ensure your sugar will not solidify and become hard.
Now add banana and coat with caramelized sugar until it has enough coating and lightly brown still with continuous mixing. You can also add cinnamon powder while cooking.
You can use a slotted spatula to remove excess oil once your bananacue is cooked.
Once cooked insert the skewer in the center starting from one end until the whole banana is inserted and served while it’s hot. Alternatively, enjoy bananacue with a fork.
RECIPE NOTES
- Use a wok so that bananas will be submerged in the oil easier to cook and easy to coat with sugar.
- Make sure that your wok or pan is hot enough before adding the bananas.
- Do not leave it unattended and give it a mix to make sure the sugar sticks in the banana and not in the pan.
- Avoid overcrowding your bananas when frying.
