If you are looking for a quick cheap meal that is still healthy try this vegan garlic mushroom recipe. It is a perfect dish to be paired with pasta tossed with some olive oil, on burgers as toppings, or even with rice. If you prefer it as toppings for burgers be sure to slice the mushrooms before cooking.
While this recipe is mainly as an appetizer or side dish, I prefer it with rice seriously because asians live with rice. You can top your rice with some sesame seeds or crispy garlic and even shallots.

Which mushrooms to use?
This vegan garlic mushroom recipe is so versatile you can use your favorite mushroom type. You may also opt for two mushroom types adding Shiitake or Oyster mushroom. You can either slice the mushroom or leave it as whole mushrooms and cook.

For the cooking, if you do not like to use vegan butter, you can also cook this mushroom recipe with olive oil or any oil of your choice but garlic and butter when combined gives that flavorful taste and smell.
Want more garlic, you can definitely add some more chopped garlic or powdered garlic. I like it to be savory so adding some chili flakes or fresh red chili will give this recipe an extra kick, be sure to have another extra rice.

I cook this recipe using my lodge skillet cast-iron but you can definitely make it in your choice of pan just make sure there is enough space to spread the mushroom so you can achieve that golden brown texture and not overcrowding it.
Cooking this recipe be sure to just use medium heat to avoid burning the butter and making sure mushrooms are well cooked. Avoid stirring too much the mushroom let it cook on one side first before tossing to the other side.
While for seasoning herbs, spices, and just add salt, pepper, chili of your choice, or some Italian seasoning and just a little cumin. Adding fresh herbs is a good choice and you can choose from parsley, thyme, or oregano. But if you do not have fresh herbs then dry herbs will also work here.
How Do You Clean Mushrooms
Whether you are using canned mushrooms or fresh produce you don’t want to soak mushrooms very long because it absorbs water. If using canned mushroom just simply put in a colander run in the water and dry with a paper towel.
For fresh mushrooms, you can individually check each mushroom for dirt, shake off or remove some dirt before running it with water and dry with a paper towel. Once you dry the mushrooms you are all set to prepare other ingredients.

Vegan Garlic Mushroom Recipe
Ingredients
- 1 pack Button Mushroom
- 1-2 bulbs of garlic ( I use 2 bulbs- chopped)
- 2 tbsp vegan butter (options: regular butter, olive oil)
- Pinch of salt
- Pinch of pepper
- Pinch of chili flakes ( more if you want spicy)
- Fresh parsley or thyme other herbs of your choice
- Sesame seeds (optional)

Instructions
- Prepare ingredients. Wash and dry mushrooms with a paper towel.
- Chop garlic and set aside.
- Prepare seasoning and spices.
- Chop some fresh herbs. I use parsley for this recipe.
- Heat pan first once it’s hot add vegan butter and wait to melt under medium heat.
- Add mushroom and let one side cook first. Try to avoid stirring. (4-5 minutes or until golden brown) before tossing and cooking the other side.
- Add garlic and cook until golden brown.
- Add salt, pepper, herbs and chili flakes. Occasionally stirring.
- Add fresh herbs.
- Serve while it’s hot.

Recipe Notes
- If you want more flavor you may add 1-2 tbsp of white wine.
- I use 2 bulbs of garlic because I really like toasted garlic, it adds really good flavor and really great with butter. You can reduce your garlic to one bulb or 2-3 cloves.
- You may add fresh chili or chili flakes depending on how much heat or spiciness you can handle.
- Adjust the taste according to your preference with salt and pepper.
- The trick to easily peel garlic, place in a mason jar the cloves and shake for about 20 seconds or in a bowl making sure to cover the top.
