Did you just imagine how gooey these vegan ginger spice cookies are? Iโm always down with ginger cookies. I like its fiery taste and smell I will usually buy vegan gingersnap cookies and snack them at work.ย
Although these vegan ginger spice cookies are a bit different than gingersnap cookies because of the snap and level of crisp both are great cookies and will still give you that fiery taste of ginger adding some kick with the cookies.
This recipe uses all dairy-free ingredients, I also opted for brown sugar instead of granulated white sugar. Also, another sweetener I use is maple syrup but you can definitely use molasses too.
I was able to bake 21 cookies from this recipe, a perfect snack to last me about two weeks, well almost two weeks itโs so good I have to control myself from consuming all in one sitting.

- It is also used as treatment for upset stomach and nausea.
- It can also lessen pain from headaches and joints.
- It has antioxidant and anti-inflammatory properties.ย
- Ginger can also aid in regulating blood sugar.

Vegan Ginger Spice Cookies
Ingredients
- 2 cups (250g) all-purpose flour
- ยฝ cup (90g) brown sugar (you can also use granulated white sugar)
- ยฝ tsp baking powder
- ยฝ tsp baking soda
- ยฝ tsp ground cinnamon
- ยฝ tsp ground nutmeg
- 2 tsp ground ginger
- ยฝ tsp salt
- 1 flax egg ( 1 tbsp flaxseed + 3 tbsp water mix together)
- 1/3 cup (75g) vegan butter(melted) ( you can also use oil)
- ยผ cup maple syrup ( you can also use molasses
- 1 tsp vanilla
- 1 cup dark chocolate chips
Instructions
- Preheat the oven to 180C or 350F. Prepare your baking pan by putting parchment paper and set aside.
- In a small bowl, mix flaxseed with water to create a flax egg rest for about 5 minutes.
- In a large bowl mix all dry ingredients all-purpose flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, salt, and ginger.
- In a separate bowl mix liquid ingredients vegan butter, maple syrup and vanilla. Add the flax egg mixture.
- Pour the liquid mixture with dry ingredients, adding the chocolate chips and mix well until combined.
- Scoop a portion of the dough and line them in the baking pan creating some space in between.
- This recipe will yield about 20-21 pieces depending on the size of your scoop.
- Bake for about 10-12 minutes or until a toothpick is inserted and comes out clean. If you want a little more crunchy bake for about 15-20 minutes.
- Remove from the oven after baking and let it cool first before transferring into your wire rack or plate.
- Serve with coffee or tea.ย
- Store extra ginger spice cookies in an airtight container. Store in your counter or fridge to last longer.
Notes
- If your batter is too dry just try mixing well enough all the ingredients until you see that flour is already combined with other ingredients.
- You can make the chocolate chips ยฝ cup if you prefer that way.
