I followed my heart and so I made healthy vegan green lentil burger patties.

Inspired to recreate more healthy recipes from the ones we used to eat like burgers. I made these vegan green lentil burger patties by adapting my red lentil burger patties recipe.

With a few tweaks from the red lentil burger recipe, this will be added to your favorite burger recipes. If you are new to my blog I create recipes that are dairy-free, vegan, easy to prepare, and most importantly pocket friendly.

HELPFUL GUIDELINES FOR VEGANISM

RED LENTIL vs GREEN LENTIL

If you soak the lentils in water prior to cooking, the cooking time is lesser while if you plan to boil right away after washing it will be longer. Soaking lentils in water can take about 30 minutes to an hour.

Red lentils are faster to cook, about 10 minutes if you soak them first or about or less than 30 minutes with direct boiling. They are also nuttier than green ones. Also, they tend to be mushier if you overcook them or tend to mix them a lot.

Green lentils have a more peppery taste which makes this recipe great because of that extra spice without the need to add too much pepper or chili. I cook these lentils for about 40 minutes without prior soaking.

The size of lentils can also vary depending on the brand. I got my red lentils from tesco and they are smaller in size compared to the locally sourced green lentils I got. Also it requires refrigeration after opening.

Check the label for storage instructions although most lentils can be kept in your cupboard.

MAKE IT GLUTEN FREE AND VEGAN

Make your recipe gluten-free and vegan by using ingredients that follow it.

Cornflour – instead of using all-purpose flour I tried to use cornflour and it did not disappoint in giving that crispy bite. Just like flour, it helps absorb moisture from the carrots and lentils.

Gluten-free soy sauce – choose a gluten-free soy sauce like this Kikkoman gluten-free soy sauce.

Bread crumbs –  with your gluten-free bread you can make your own bread crumbs with the help of a food processor. Make it extra crispy by baking the crumbs for 10 mins under 300F.

Flax egg –  this will be our binder to make these vegan burger patties.

VEGAN GREEN LENTIL BURGER PATTIES

INGREDIENTS

  • 1 cup green lentils
  • 3 cups water for boiling
  • 4 cloves garlic
  • 1 medium white onion
  • 1 carrot (grated or chopped finely)
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon chilli powder
  • ¾ cups cornflour
  • ¾ cups bread crumbs
  • 2-3 tablespoons olive oil ( for frying)
  • 1 tablespoon gluten-free soy sauce
  • 2 flax eggs ( 2 tablespoons flaxseed powder and 6 tablespoons water)
  • Optional Ingredients: cumin, cardamom, parsley

INSTRUCTIONS

  1. Wash lentils to remove unwanted small parts and dirts. 
  2. Boil 1 cup of green lentils with 3-4 cups of water for about 40 minutes or until soft. (40 mins. time is without prior soaking)
  3. While waiting for lentils to get done prepare the other ingredients.
  4. (Optional) With a food processor, peel onion and garlic and place inside.
  5. Peel and cut carrots and add in the food processor.
  6. Pulse until fine and combined.
  7. (Without food processor) Peel and chop garlic and onion finely and set aside.
  8. With a grater, peel carrots and grate then set aside.
  9. Prepare flax egg. Mix two tablespoons of flaxseed with 6  tablespoons of water. Mix and let it sit for about 10 minutes.
  10. Once green lentils are ready, remove excess water and set them aside.
  11. Using the same pot or a skillet iron, swirl one tablespoon of olive oil.
  12. Add onion and garlic and cook for about 2 minutes or until lightly brown.
  13. Add carrots and cook for another two minutes.
  14. Add cooked lentils then add soy sauce, pepper, salt and chilli powder. Giving a mix until everything is combined. Turn off the stove.
  15. Add flax egg, bread crumbs and cornflour. Mix well until everything is combined. Let it cool down for a few minutes prior to shaping it into patties.
  16. Alternatively, you can again use a food processor to combine ( cooked lentils with the flax egg, bread crumbs and corn flour) the ingredients. 
  17. Do not over pulse the mixture or try to keep the green lentils not too mushy.
  18. Shape into burger patties according to your preference. Alternatively, use a burger shaping for a more defined shape.
  19. Keep in a clean container with a separator. You can keep the burger patties in the fridge for about 30 minutes prior to frying. (optional) I only kept mine for about 10 minutes as I needed to cook right away.
  20. Fry in a pan with 1-2 tablespoons of olive oil. Use medium heat to avoid burning the patties and avoid flipping early.
  21. Excess patties can be kept in a clean airtight container. It can be frozen for up to 3 months or in the fridge for up to 7 days. Note. that keeping it long can also create moisture when thawed.
  22. Your vegan green lentil burger patties can be served with buns, avocados and lettuce. You can also pair it with rice and make a gravy or sauce.

RECIPE NOTES

  • This recipe can make 12 burger patties which I only kept in the fridge for easier cooking.
  • Pair with vegan buns of your choice with cherry tomatoes on the side and some green lettuce.
  • Add more spices or herbs if you like and let me know in the comments so I could try too.
  • Make a naked burger by adding salad instead of using buns.

    I’ve only had lentil burgers at restaurants and had no idea how they were made, actually they were very easy. Glad to know the difference between lentils as this is something I have just started cooking with.
